  • 250 millilitres (cold water
  • 250 millilitres dates (or seeded raisins chopped)
  • 250 millilitres brown sugar
  • 1 teaspoon baking soda
  • 2 tablespoons butter
  • 500 millilitres self-raising flour (sifted)
  • 1 lightly beaten egg
  • 1 pinch of salt

  • Preheat oven to 180°C.
  • Put water, fruit, sugar, soda and butter into a medium saucepan and stir over low heat till the butter has melted.
  • Add the flour, salt and egg and stir till combined.
  • Pour into a greased and lined loaf tin-approx. 23 x 13 x 7cm (this is the size tin in Nigella's recipes, mines a bit smaller and works fine).
