Which Of Nigella's Loaf Cakes Are Easy To Slice?

Asked by suepres61. Answered on 13th March 2026

Full question

I cook for the local soup kitchen. It is for forty people and the cakes are sliced and placed in a paper bag. Any ideas? Loaf cakes would be particularly good. Only restriction is no alcohol.

Our answer

Nigella has a few loaf cakes that slice well and it depends how plain or rich you would like the cakes to be. For a plain cake we would suggest My Mother-In-Law's Madeira Cake, which is rich and buttery and slices well into around 8-10 pieces. The Cherry Almond Loaf Cake is similar but with the addition of ground almonds, which makes the cake slightly moister. It is also studded with glacé cherries. The Cumin Seed Cake is another variation on the madeira cake and you could use caraway seeds as an alternative. If you want a cake that is sticky and rich then maybe try the Quadruple Chocolate Loaf Cake.

If you can also consider single layer round cakes that slice well then we would suggest trying the Honey Cake With Dates and Apples as this cake will also stay moist for a while after slicing. The Chocolate Olive Oil Cake made with flour rather than almonds is another cake that slices well and stays moist. The introduction to the recipe explains how to substitute plain (all-purpose) flour for the almonds. Finally, the Chocolate Gingerbread and Fresh Gingerbread With Lemon Icing are both cakes that slice well ino squares that would be easy to fit into bags. You can omit the icing from the top of both of these cakes to make packing slices into bags easier.
