Ham and Olive Bread

Introduction

Came across this on the internet. It's tried and tested (and also tasted) and delicious!!! Goes great with salads.

Ingredients

Serves: 4

  • 210 grams plain flour
  • 2½ teaspoons baking powder
  • ¼ teaspoon salt
  • 3 medium eggs
  • 70 millilitres olive oil
  • 100 millilitres white wine
  • 500 millilitres ham (chopped)
  • 375 millilitres green olives (pitted)
  • 500 millilitres Gruyere cheese (shredded)

Method

  • Pre-heat the oven to 425°F / 220°C / Gas mark 7.
  • In a large bowl, sieve in the flour, baking powder and salt together.
  • In a smaller bowl, break in the eggs. To the eggs, add the olive oil and white wine, and whisk together.
  • Pour the egg mixture to the flour, and mix to obtain a smooth lump-free batter.
  • To the batter, add the chopped ham, olives, and the cheese. Mix well.
  • Then pour the mixture to a greased loaf tin, and even out the top.
  • Bake in the oven for 45 – 50 mins. (check with a skewer!)
  • Additional Information

    Be careful with the salt, as it has already got ham and olives to make it a little salty. You can omit the salt altogether if you don't prefer excess salt.
