Grandma's Refrigerator Rolls

Introduction

The dough for these rolls can be made in advance and stored in the refrigerator until you are ready for them. When you are ready to bake, simply cut off what you need, and leave the rest for later. Mixture may be beaten by hand, or with a stand mixer with the hook attachment.

Ingredients

Serves: 1

  • 1 packet dried yeast
  • 2 cups warm water
  • ¼ cup sugar
  • 2 teaspoons salt
  • 6½ cups all-purpose flour
  • 1 beaten egg
  • ¼ cup soft vegetable shortening (such as Crisco)

Method

  • Dissolve yeast in water, add sugar, salt, and half of the flour. Beat thoroughly for approx. two minutes.
  • Add egg and shortening. Beat in remaining flour gradually until dough comes together.
  • Remove dough from mixing bowl and knead on floured surface with hands until smooth, and no longer sticky. Place in greased bowl (or spray bowl with non-stick cooking spray).
  • Cover with damp cloth and place in refrigerator. Punch down occasionally.
  • At least two hours before baking, cut off amount needed. Roll dough out onto floured surface, approximately 1/2" thick. Cut out with round biscuit cutter, dip both sides of roll into melted butter, and place into pan. Let rise in pan until double in size.
  • Bake in 400 degree oven for 12 - 15 minutes. (Dark pans or cast iron will produce browner rolls).
