  • 5 tomatoes (chopped and deseeded)
  • ¾ cucumber (peeled and chopped)
  • 1 bunch fresh mint (chopped)
  • 1 bunch fresh parsley (chopped)
  • 1 medium onion (or 3 medium shallots, chopped)
  • 1 lemon (juice of)
  • 7 tablespoons olive oil
  • salt (plenty)
  • pepper (plenty)
