Ingredients

Serves: 40

Metric Cups
  • 300 millilitres whipping cream
  • 300 millilitres caster sugar
  • 100 millilitres golden syrup
  • 2 tablespoons glucose syrup
  • 50 grams butter
  • 100 grams dark chocolate
  • peppermint essence
  • peppermint candy (chopped for decorating)
  • 10½ fluid ounces heavy cream
  • 10½ fluid ounces superfine sugar
  • 3½ fluid ounces golden syrup or light corn syrup
  • 2 tablespoons glucose syrup
  • 2 ounces butter
  • 4 ounces bittersweet chocolate
  • peppermint essence
  • peppermint candy (chopped for decorating)

Method

  1. Bring cream, syrup and sugar to a boil. Let the caramel reach a temperatur of 120° C. Stir frequently.
  2. Beat down glucose, butter, chocolate and season the fudge with a few drops of peppermint oil.
  3. Pour the batter into a dressed dish and garnish with some chopped peppermint candy.
  4. Let the fudge cool and set int the fridge, then cut it into proper bites.
