Ingredients

Serves: 6

Metric Cups
  • 90 millilitres sugar
  • 500 millilitres apple juice
  • 250 millilitres passionfruit pulp
  • 15 millilitres gelatine powder
  • 3⅙ fluid ounces sugar
  • 17½ fluid ounces apple juice
  • 8⅘ fluid ounces passionfruit pulp
  • ½ fluid ounce gelatine powder

Method

Passionfruit Parfait is a community recipe submitted by passionfruit and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Heat sugar and half apple juice over medium heat till sugar has dissolved. Bring to boil.
  • Remove from the heat and stir in the passion fruit pulp. Whisk for a minute and then strain, reserving 10 ml of the pips. Discard the rest.
  • Place the remaining apple juice into a saucepan. Add the gelatine and warm over a low heat until it dissolves. Stir into the passion fruit mixture.
  • Chill for 30 minutes.
  • Stir in the seeds. Divide 3/4 of the mixture between 6 parfait glasses. Chill.
  • Place the remaining mixture in a bowl. Beat with an electric mixer until doubled and pale. Spoon on top of each parfait and chill for 15 minutes.
