Benicia Bay Brownies

Introduction

These moist cakelike brownies are named after a charming town in the San Francisco Bay area.

Ingredients

Serves: 10

  • ⅓ cup canola oil
  • 6 tablespoons unsweetened cocoa (unsweetened)
  • 1 large egg
  • 1¼ cups granulated sugar
  • 1⅓ cups flour
  • ½ teaspoon baking soda
  • ½ teaspoon sea salt
  • 1 teaspoon pure vanilla extract
  • ¾ cup water
  • ¾ cup chocolate chips (semi-sweet)
  • ½ cup coarsely chopped pecan nuts (or walnuts)

  • Preheat the oven to 350F (180 Celsius or gas mark 4) with an oven rack in the center position.
  • Spray an 8-inch square pan with canola oil.
  • Measure all ingredients in turn (except the chocolate chips and nuts) into the large bowl of an electric mixer or a mixing bowl.
  • Beat at slow speed (if using a mixer) or by hand with a wooden spoon until everything is combined, then beat at medium mixer speed for 1 minute, until the batter is smooth; if you are mixing by hand, be sure to beat the batter well, about 3 minutes.
  • Scrape the batter into the prepared pan, spreading it evenly.
  • Sprinkle the chocolate chips over the top and press them in slightly.
  • Scatter the nuts evenly over the chocolate.
  • Bake the brownies for 35 minutes, or until a cake tester inserted in the center comes out clean.
  • Remove from oven and set on a wire rack to cool.
  • Cut into squares or bars when they are completely cool.
