Make this only when you have fresh, unblemished and aromatic apricots to hand. A wonderful way to use up a glut if you are lucky enough to have an apricot tree.

Ingredients

Metric Cups
  • 75 millilitres water
  • 1 tablespoon soft light brown sugar
  • 2 star anise (whole)
  • 1 cinnamon stick
  • 500 grams fresh apricots (halved and de-stoned - prepared weight)
  • 1 teaspoon lemon juice
  • 3 fluid ounces water
  • 1 tablespoon soft light brown sugar

Method

  • In a saucepan, combine water, sugar, star anise and cinnamon stick; bring to a simmer, stirring to dissolve the sugar.
  • Add apricots; when the mixture has returned to a simmer, reduce the heat to low, cover the pan and cook for 10 to 15 minutes, or until the apricots are tender.
  • Remove from the heat and stir in the lemon juice. Cover the pan and let apricots steep for about 30 minutes.
  • Serve warm or at room temperature. Will keep in a sealed container in the refrigerator for two or three days.
