Dutch Beignets

Pronounced "ben-yays". A traditional dish from the Netherlands. I got the recipe from my Dutch grandfather. He made it every year at my parents' New Years' Eve party. I post the recipe in his memory.


Serves: 10

  • 1500 flour
  • 1 teaspoon salt
  • 340 apples (peeled cored and sliced ½
  • pineapple (cut into rings)
  • banana (sliced lengthwise and in half)
  • oil (for frying)
  • confectioners' sugar

  • Combine flour, salt, and beer. Mix with a wooden spoon to form a batter, incorporating as much air as possible
  • Dip fruit in the batter and make sure that both sides are coated thoroughly
  • Fry in the very hot oil until golden brown and crispy on both sides
  • Remove to paper towels to dry excess oil
  • Almost immediately, coat generously with powdered sugar (my father says that beignets are a vehicle for powdered sugar in the same way that lobster is a vehicle for butter!)
  • Serve with fried food in general, beignets do not keep at all well!
  • Additional Information

    Be careful to separate the fruit as it will tend to stick together. Also, be prepared for a messy kitchen! These do make for very good cold-weather party food...and they are perfect for a New Year's Eve party.
