Introduction

This light biscuit is the perfect afternoon treat; serve with your favourite cup of tea. Or, serve a scoop of vanilla ice cream with a couple of biscuits for an elegant dessert. For an extra zing, add in ½ teaspoon ground ginger.

Ingredients

Metric Cups
  • 50 grams margarine
  • 75 grams caster sugar
  • 75 grams plain flour
  • 1 medium egg (free range)
  • 50 grams mixed peel
  • 1¾ ounces margarine
  • 2⅔ ounces superfine sugar
  • 2⅔ ounces all-purpose flour
  • 1 medium egg (free range)
  • 1¾ ounces mixed peel

Method

  • Preheat the oven to 160°C
  • Cream together the butter and sugar, until light and creamy.
  • Beat in the egg.
  • Fold in the flour and mixed peel.
  • Grease a baking sheet, and place teaspoons of the mixture on the sheet. Leave space between the biscuits, as they will spread as they bake.
  • Bake for 10-15 minutes, until lightly golden. Remove from the oven and place on a cooling rack until cool.
  • Store in an airtight container for up to 2 weeks.
