Three Berry Pie

Introduction

I love old movies and always want a piece of that berry pie that they make. Well I looked for an easy recipe and everyone compliments this. This is easy and very delicious with whipped cream. You can substitute the berries for 4 cups of mixed berries

Ingredients

Serves: Medium pie

  • 188 fresh, halved strawberries
  • 375 raspberries
  • 313 fresh blueberries
  • 125 granulated sugar
  • 2½ tablespoons cornstarch (or cornflour)
  • ¾ packet shortcrust pastry (for a medium pie)

Method

  • In a large mixing bowl, stir together sugar and cornstarch. Add strawberries, raspberries, and blueberries; gently toss until berries are coated. When using frozen fruit allow fruit mixture to stand for 15 to 30 minutes, or until fruit is partially thawed.
  • Line a medium pie plate with half of the pastry.
  • Stir berry mixture, and transfer to the crust lined pie plate.
  • Roll out the top crust and sprinkle with sugar, give it a quick roll with the rolling pin.
  • Top with second crust, and seal and crimp the edge. To prevent over browning, cover the edge of the pie with foil.
  • Bake at 375 degrees F (190 degrees C) for 25 minutes when using fresh fruit, 50 minutes for frozen fruit.
  • Remove foil. Bake for an additional 20 to 30 minutes, or until the top is golden. Cool on a wire rack.
  • Additional Information

    I set my oven for 20min at 190 degrees and then turn it down to 160 for the rest of the time.
