Ingredients

Serves: 20 wine bottles.

Metric Cups
  • 15 litres water
  • 2½ kilograms sugar
  • 2 tablespoons ground ginger
  • 2 teaspoons brewers yeast
  • 2 tablespoons cream of tartar
  • 2 tablespoons tartaric acid
  • 26⅖ pints water
  • 5½ pounds sugar
  • 2 tablespoons ground ginger

  • 2 tablespoons tartaric acid

Method

  • Mix together in a large plastic bucket with lid.
  • Leave for 24 hours.
  • Strain into bottles with screw tops. (old wine bottles)
  • Stand for at least a week before you drink it.

    If it is really hot, I recommend you store your bottles in a cool spot (like under the house). I had one blow a hole in my sleep out roof last year!! They can get very volatile if left to long!
