Mussels in a Creamy Curry Sauce

Introduction

This is so simple and quick to prepare. Makes a great starter best enjoyed with lots of crusty bread to mop up the sauce.

Ingredients

Serves: 6

  • ⅞ kilogram mussels
  • 2 tablespoons vegetable oil
  • 1 onion
  • 2 cloves minced garlic
  • 2 teaspoons finely chopped fresh gingerroot
  • 1 tablespoon curry powder
  • 125 millilitres dry white wine
  • 250 millilitres heavy cream
  • salt
  • pepper
  • 2 tablespoons chopped scallions (for decoration)

  • Heat oil over medium heat. Add onion, garlic and ginger. Stir for 3 min.
  • Add curry, cook for 30 seconds.
  • Pour in wine and bring to simmer. Add mussels until open 5-7 min. Remove and keep warm
  • Bring liquid to boil over high heat and reduced a little. Pour in cream boil for 2 min.
  • Pour over mussels.
