  • 2 cucumber (peeled and cut into cubes)
  • 7 fluid ounces chicken broth
  • heavy cream
  • salt
  • pepper
  • croutons
  • chives

Method

  • Simmer cucumbers in butter in a pan for 10-15 minutes
  • Blitz the cucumbers in a food processor with approx 2 dl chicken broth and let it cool.
  • Before serving the soup add 2 dl heavy cream, which you have whipped very "lightly" (still a bit runny), salt & pepper to taste.
  • Make some bread croutons and drizzle chives over each soup bowl
