                                    Pre-heat oven to 350 degrees  Beat egg Add onion and pepper( red, orange, green and purple for color) equivalent of 1 medium seeded Mix remaining ingredients  Press into well oiled pan(I like to use a meatloaf pan so the fat can fall to the drip pan below Bake for 45 minutes Remove to a platter and surround with celery and parsley leaves  Squirt a little catsup in zig zag patterns across the top before you slice  Serve with garlic mashed or scalloped potatoes with skins in tact for the extra vitamins and minerals pulled from the soil Aztec blues or a mix of Yukon gold and red bliss are my faves..the brilliant Aztec blues will turn lilac in color after cooking ...the only way to hold this deep color is to spiral slice and flash fry these potatoes..I use them(blue potatoes) as birds nests for serving surprises..a trick I learned years ago from Chef Liz

The basic 50's diner meatloaf My family has used this recipe for over 50 years I love the smell of this loaf baking... It smells like home and I can imagine the sounds of Bonanza's theme song on television; The Cartwright family riding up on their horses with my family watching the screen over our TV trays on a Saturday night.

Ingredients
Serves: 4
- ½ ground beef (I like to mix equal parts of pork and beef mince)
 - 1 medium diced sweet onion
 - 1 egg
 - ½ cup quick-cooking oats (don't use instant)
 - ⅔ cup tomato ketchup
 - 1 diced red bell pepper
 - 1 tablespoon Worcestershire sauce
 - salt (to taste)
 - pepper (to taste)

Show more commentsThis is an excellent meatloaf; thanks. Delicious, just moist enough, easy to prepare. (I think the bell pepper makes it. I believe bell peppers are what we call "capsicums" here in Australia. Well, that's what I used, anyway: a green capsicum.)
