My mum used to make this for me when I was a child and it was a favourite of mine! I have finally found the recipe again and here I am sharing it with you! Happy cooking/eating!

My mum used to make this for me when I was a child and it was a favourite of mine! I have finally found the recipe again and here I am sharing it with you! Happy cooking/eating!

Ingredients

Serves: 4-6

Metric Cups
  • 150 grams butter
  • 150 grams sugar
  • vanilla sugar (a little bag, or 1 tablespoon of vanilla extract)
  • 1 lemon (zest of)
  • 3 eggs
  • 200 grams plain flour
  • 1 teaspoon baking powder
  • 1 teaspoon bicarbonate of soda
  • 5 tablespoons milk
  • 4 large apples (eating apples)
  • 5 ounces butter
  • 5 ounces sugar
  • vanilla sugar (a little bag, or 1 tablespoon of vanilla extract)
  • 1 lemon (zest of)
  • 3 eggs
  • 7 ounces all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 5 tablespoons milk
  • 4 large apples (eating apples)

Method

My Mum's Vanilla Apple Sponge is a community recipe submitted by Sispaddy and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Grease and line a 24cm tin and preheat the oven at 180°C.
  • Mix well butter and sugar together, add the vanilla and lemon zest and mix again.
  • Add one egg at a time, mixing well before adding the next one. Add the flour, baking powder and bic of soda and mix. Add the milk, one spoon at the time, mixing well before adding the next one.
  • Chop up in small cubes 2 small apples or 1,5 big apples and add to the mixture, mix and put in the tin, levelling the mixture.
  • Cut into small wedges the rest of the apples and place “as a crownâ€� on top of the cake.
  • Cook for about 1 h, but check after 45-50 mins the centre of the cake.

    You can substitute the lemon zest with a tsp of cinnamon, as the version in the picture ... very yummy!!
