Banana Cake With Meringue Icing

Delicious, easy to make. Icing holds up very well.

Ingredients

Serves: 12

For the Cake

  • 625 millilitres flour
  • 1½ teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 eggs
  • 188 millilitres butter
  • 4 medium bananas
  • 1 tablespoon instant coffee
  • 375 millilitres granulated sugar
  • 1 teaspoon vanilla
  • ¼ teaspoon salt

For the Meringue Icing

  • 2 egg whites
  • 375 millilitres brown sugar
  • ¼ teaspoon cream of tartar
  • 83 millilitres water
  • 1 teaspoon vanilla

Method

Cake instructions:

  • Sift together flour, baking powder and baking soda.
  • Place remaining ingredients in a food processor and process until smooth.
  • Pour over dry ingredients and mix until just smooth. Pour into two 9" cake pans (greased and floured) Bake in 375 degree oven for about 30 minutes.
  • Icing instructions:

  • Combine all ingredients except vanilla in the top of a double boiler and set over boiling water. Beat constantly with an electric hand beater until stiff peaks form. Remove from heat and add vanilla, beat until cool.
