Ingredients

Metric Cups
  • 1 teaspoon lemon peel (grated)
  • 40 grams self-raising flour
  • 60 millilitres lemon juice
  • 60 grams butter
  • 185 grams caster sugar
  • 3 eggs (separated)
  • 185 millilitres milk
  • 1 sprinkling of icing sugar (to dust)
  • 1 teaspoon lemon peel (grated)
  • 1⅖ ounces self-rising flour
  • 2 fluid ounces lemon juice
  • 2⅛ ounces butter
  • 6½ ounces superfine sugar
  • 3 eggs (separated)
  • 6 fluid ounces milk
  • 1 sprinkling of confectioners' sugar (to dust)

Method

  • Preheat the oven to 180ºC (350ºF, gas 4).
  • brush a 1litre ovenproof dish with oil or melted butter. Using an electric whisk beat the butter lemon rind, sugar and egg yolks until light and creamy.
  • Sift in the flour and stir until just combined. Add the juice and milk and stir to combine.
  • Place the egg WHITES in a small dry bowl. once again using electric beaters whisk to form firm peeks. Fold into the pudding mixture until only just combined.
  • Spoon into the prepared dish and put the dish into a larger dish filled with boiling water which comes up to about one-third of the way up the side of the larger dish, bake for 40mins or slightly less if you have a hot oven.
  • dust with icing sugar and serve with cream or ice-cream. make sure you spoon some sauce over each serving and enjoy!

    • Great recipe worked perfectly in a 1 litre loaf tin which was all I had. Soft fluffy sponge and thick tangy sauce.
