Belgian Waffles

The best waffles ever...goes perfectly with vanilla ice-cream on a hot hot day!


Serves: Makes 5 large waffles.

  • 125 warm water
  • 1 teaspoon superfine sugar
  • 1 packet dried yeast
  • 625 flour
  • 63 superfine sugar
  • ¼ teaspoon salt
  • ¼ teaspoon nutmeg
  • 500 lukewarm milk
  • 2 egg yolks (beaten)
  • 125 melted margarine
  • 2 teaspoons vanilla extract
  • 2 egg whites

  • Measure water into a large bowl.
  • Add 1 tsp sugar and stir to dissolve. Sprinkle yeast over water and let stand 10 minutes. Stir well.
  • Add all remaining ingredients except egg whites and beat with a rotary beater until smooth. Cover with wax paper and let rise in a warm place for 30 minutes.
  • Beat egg whites until stiff but not dry andfold into batter. Bake in a moderately hot waffle iron.
