  • 1 egg

Method

Fried Zucchini is a community recipe submitted by sugarbaby and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  1. Peel the courgettes. Take out all the seeds in the middle using a big spoon, so that you get a courgettes with a hole inside. Cut the courgettes in thin slices, about 0,5 cm wide.
  2. Put an egg into a bowl and whisk it with a table spoon of water and a pinch of salt.
  3. Take each courgettes slice, put it into flour so that it becomes white. Then put it into the whisked egg so that it is all covered with the mixture. Then put the slice into the breadcrumbs so that the crumbs cover the whole slice. Repeat with all the slices.
  4. Heat the vegetable oil in a pan.
  5. Fry the courgettes slices for about one minute on each side so that they are golden brown.
  6. Take them out from the pan and put them on a paper napkin so that it absorbs the excess of oil. Serve hot or at room temperature with a bowl of salad or meat.

Additional Information

Be careful about the sequence - flour, egg, breadcrumbs. If you feel that the zucchini is full of water once you slice it, you can use a kitchen towel and dry it a little. This way the breadcrumbs won't get soggy later.
