Bonnie's Dead Easy Chicken Papillote

Introduction

This dish is simply chicken and vegetable parcels baked in the oven. This looks like an impressive dish when served, but in truth there is minimal preparation, cooking and washing up, which makes it equally ideal for a dinner party at which you actually want to sit down and spend time with your guests, or for a simple healthy meal alone when you have just gotten home from work, dead tired. The other good thing about this dish is that the ingredients are cheap and it's easy to buy the exact amount of ingredients you need, and scale up or down, so that there is little waste.

Ingredients

Metric Cups
  • 1 chicken thigh fillet (or breast - per serving)
  • ½ rasher bacon
  • ½ potato (peeled and sliced into 2mm rounds)
  • 3 green beans (snapped into 2-3 pieces)
  • 1 mushrooms (sliced)
  • fresh spinach (a few leaves)
  • 2 tablespoons chicken stock (or vegetable stock, waxed baking paper and kitchen twine)

  • 1 mushrooms (sliced)

  • 2 tablespoons chicken broth (or vegetable stock, waxed baking paper and kitchen twine)

Method

Bonnie's Dead Easy Chicken Papillote is a community recipe submitted by sydneygirl and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Preparation time is around 5 - 10 mins. Preheat oven to 200oC. Cut out 2 squares of kitchen paper, doubling up so that there will be no leakage.
  • In the middle of the paper, stack a few slices of potato, sprinkle on some spinach. Wrap the mushroom and beans inside the chicken, then wrap the chicken with the rasher of bacon.
  • Put the chicken piece on top of the potato and spinach pile. Drizzle about 10ml of stock on top (but not too much, you don't want the parcel leaking). Scrunch the paper around so that it forms a little sack and tie off with the string.
  • That's it! Place in oven for 45 minutes. Go grab yourself a glass of wine, or whatever. You should be able to smell it when it's cooked. Serve the parcel unopened on a plate, so that the smell of everything in the parcel can hit the guest when they unwrap it.
  • The potatoes will be creamy tender in the stock, the chicken will be flavoured with the bacon, and the beans and mushrooms flavoured with everything else.. it's good ;) You can vary the ingredients inside the parcel according to taste.
