Roasted Three Pepper Salsa

Introduction

An amazing salsa to eat on its own, or to use in many various recipes.

Ingredients

Serves: 2-4

  • 1 yellow pepper
  • 1 jalapeno peppers
  • 1 poblano pepper
  • ½ red onion
  • 2 tins tomatoes (roasted and diced)
  • fresh coriander
  • 1 tablespoon chilli powder (warm)
  • 1 tablespoon cumin
  • 1 lime (juice and zest of)
  • salt
  • pepper
  • 1 pinch of sugar (or 2, to cut acidity)

  • roast yellow pepper, poblano and jalepeno. Peel skin off and de-seed.
  • In a food processor add: 3 peppers, tomatoes, half a red onion and remaining ingredients.
  • Then add zest of one lime and juice of same lime, salt and pepper along with cumin and chilli powder, and a touch of sugar.
  • Blitz ingredients until blended.
