Smokey Smashed Black Beans

Introduction

This is a versatile dish if you like Mexican inspired food. It can be used in burritos, in nachos or on tostadas or tacos.

Ingredients

Serves: 4

  • 1 can black beans (rinsed)
  • 1 can fire roasted tomatoes (or favourite salsa, on hand)
  • 1 red pepper (or green, diced)
  • 1 onion (small to medium sized, diced)
  • 1 jalapeno peppers (diced, or a green chilli or spicy pepper of choice - I also like chipotle pepper too!)
  • fresh coriander
  • lime juice (fresh)
  • garlic powder
  • cumin
  • chilli powder
  • salt
  • pepper

  • Sweat onions first then add pepper, onions and chili pepper of choice. Add half of the lime juice.
  • Next add the tomatoes or salsa along with fresh fresh coriander. Let simmer a bit on medium heat. 2
  • Next, add beans. rest of lime juice along with spices listed.
  • Mix well and let simmer, then use a potato masher and slightly mash black bean mixture.
