Slimmer's Mock Marie Rose Sauce

Introduction

I created this sauce during a craving for a prawn cocktail, but being on a diet a mayonnaise rich sauce was a no-no. So I had a little play in the kitchen and this was the result. I will admit that this cannot recreate the creaminess of the real deal, but once spooned onto prawns and crisp lettuce I forget that it is a substitute. All measurements are very approximate, it is more a matter of finding a satisfactory consistency and tasting as you go.

Ingredients

Serves: 4

  • ⅓ tub soft cheese (fat-free)
  • 2 tablespoons Worcestershire sauce (or to taste)
  • tabasco (to taste)
  • 2 tablespoons tomato ketchup (you may need more)
  • 2 tablespoons milk
  • salt
  • black pepper
  • 1 lemon (a squeeze of)

Method

  • In a bowl add a little Worcestershire sauce and tabasco to Quark and mash down with a fork.
  • Add ketchup and combine. Add the milk to slacken and stir well to achieve desired consistency.
  • Taste and add more of each of the sauces as required. Season with salt and pepper and a squeeze of lemon.
  • Spoon over prawn cocktail.
