Introduction

I went to a Prezzos restaurant the other day and had this as a light lunch.I dont like pizza as a rule,but this is fresh and delicious and not at all 'pizza hut' My new fave and so simple! could be used as a starter,main or a snacky tapas type thing

Ingredients

Serves: 1

  • 1 thin pizza base (homemade, or some other thin crispy bread)
  • pesto
  • buffalo mozzarella
  • rocket
  • chopped tomatoes
  • white wine vinegar
  • extra virgin olive oil
  • freshly ground pepper

  • Drizzle a little olive oil over the pizza base and warm gently in oven
  • Deseed and chop the toms roughly, then pour over a little olive oil and splash of vinegar, leave to let the flavours absorb at room temp
  • Take the warmed pizza base and spread with as much pesto as you wish, then the tomato mixture.
  • Grind over pepper, scatter over plenty of rocket, then arrange slices of mozzarella on the top. Cut into wedges
