Introduction

The internet delivery arrived and my scallops were defrosted so I made this while unpacking the bags. Simple, fast and (I think) delicious !

Ingredients

Serves: 1-2

  • scallops (frozen or fresh)
  • 1 lemon (juice of)
  • 1 bunch fresh thyme

Method

  • Place a heavy cast iron frying pan or skillet on the cooker and heat.
  • Add lemon juice and when it sizzles, scrunch thyme in your hands to release flavour and add to pan.
  • Cook until heated through but not browned. (Keeping the heat high sears rather than sizzles)
  • Additional Information

    If using frozen scallops best to add them to the dry pan and let the ice melt before adding lemon juice.
