Ingredients

Serves: 10-12

  • Start beating egg whites to soft peak stage. Add vinegar and boiling water, continue beating.
  • Slowly add 2 of the cups of confectioners' sugar, bit by bit beating the whole time.
  • Lastly add the last cup of confectioners' sugar(all at once) together with the baking powder and vanilla essence, beat.
  • Build whatever shape you would like making sure the sides are higher. I always cut up a cardboard box to the size I need(and what will fit in my oven!!) cover this with foil, shiny side to the inside.
  • Bake at 150' C for 1 hour, then turn the oven down to 100'C for another 30 minutes. aloow to cool and when needed fill with a mixture of greek yoghurt and beaten cream. add seasonal fruit. best when prepared at least an hour in advance.
