Bacon For Gingerbread Stuffing

Full question

Hello, I was just wondering, the streaky bacon used in the Gingerbread Stuffing recipe, is it unsmoked? In the Nigella video when she is preparing the bacon it appears to have more have a raw meat texture than a normal bacon (the kind you fry up with eggs) texture.

Nigella's recipe for Gingerbread Stuffing (from NIGELLA CHRISTMAS) uses crumbled ginger cake instead of breadcrumbs to give the stuffing seasonal spice. The stuffing also contains apples and (streaky) bacon for moisture and flavour. The bacon is usually unsmoked and pancetta could be used as an alternative. You could use smoked bacon if you prefer, though we feel that the smoked flavour could be a little too dominant for the stuffing.

The Gingerbread Stuffing, known as dressing in the US as it is baked separately from the turkey, is perfect for Thanksgiving, which this year is on Thursday November 23, 2017.
