Banana Bread With Different Flour

Hello, I was just wondering if there would be a substitute for rice flour in the Gluten-Free Banana Bread and can you use normal baking powder if you are not gluten intolerant? Thank you, I can't wait to make this.

Nigella's Gluten-Free Banana Bread offers universal delight and can be enjoyed by everyone. The rice flour is important as it helps to give the banana bread its light, tender texture. Rice flour can be bought in many health food or natural food stores and is also available on-line. However, you can use normal baking powder if you do not need to avoid gluten.

We would not recommend using wheat flour instead of the rice flour. Wheat flour will absorb a different amount of liquid and could leave the bread a little dry and tough. However Nigella has several recipes for banana bread and muffins using regular flour and we would suggest trying Chocolate Banana Muffins, Banana Bread or Banana Butterscotch Muffins.
