Hi, my new bundt pan has just arrived, and it's gorgeous! I can't wait to bake but I need some receipes for it! I thought I could just use regular cake recipes. Please can you let me know which of Nigella's books have bundt recipes them in so I can find them. Thank you Bina
Most bundt pans have a capacity of around 3 litres (3 quarts/12 cups) and this capacity is very similar to the capacity of two 23cm/9-inch sandwich tins (cake pans) so you may be able to convert some recipes that are for 2-layer 23cm/9-inch cakes to a bundt pan. You will need to increase the baking time to about 50 minutes to 1 hour (check the cake after 50 minutes, if it is done then it should feel firm to the touch and a cake tester should come out clean). The advantage of bundt cakes is that they have a lovely shape so need very little decoration, merely a light dusting of icing (confectioners') sugar.
However some of the best bundt recipes are American-style "coffee cake" recipes. These cakes are designed to be eaten at morning coffee (or even afternoon tea) rather than being flavoured with coffee and often have a crumbly "stresusel", made from butter, sugar and flour, incorporated into the cake. Nigella's Maple Pecan Bundt Cake from Kitchen (p239) is a delicious example of this type of cake. The Spruced Up Vanilla Cake from Kitchen (p198) can also be baked in a regular bunt pan. The batter for this cake is quite versatile and you can also make the spice version (p198) or even flavour the cake batter with finely grated lemon or orange zest for a citrus twist.
