Mediterranean Chicken Platter

Introduction

This is the perfect dinner recipe if you're having a few friends over! It looks elaborate with the rice, chicken and potatoes but it honestly only takes 30-40 minutes including marination time! But the trick is to use leftover boiled rice, and if you don't have any in the fridge just boil some more and cool it down before using it for this recipe!

This platter will have your friends oooing over your cooking skills!

Ingredients

Serves: 4

Metric Cups

For the for the Chicken

  • 4 chicken breasts (each sliced into 3)
  • 2 tablespoons mustard
  • 2 teaspoons garlic
  • 2 tablespoons soy sauce
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon red pepper
  • 83 millilitres cream
  • 1 tablespoon tomato paste
  • 3 tablespoons oil (for cooking)

For the Rice

  • 1000 millilitres rice
  • 1 tablespoon soy sauce
  • 2 tablespoons garlic (crushed)
  • 1 tablespoon oil

For the for the Potatoes

  • 20 grams baby potatoes
  • 5 cloves garlic (whole)
  • 2 tablespoons soy sauce
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 teaspoon red pepper flakes (crushed)
  • 2 tablespoons butter
  • 1 tablespoon oil

For the for the Chicken

  • ½ teaspoon red bell pepper
  • 3 fluid ounces cream
  • 1 tablespoon tomato paste
  • 3 tablespoons oil (for cooking)

For the Rice

  • 35 fluid ounces rice
  • 1 tablespoon soy sauce
  • 2 tablespoons garlic (crushed)
  • 1 tablespoon oil

For the for the Potatoes

  • ¾ ounce baby potatoes
  • 5 cloves garlic (whole)
  • 2 tablespoons soy sauce
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 teaspoon red pepper flakes (crushed)
  • 2 tablespoons butter
  • 1 tablespoon oil

For the Chicken

  1. Mix the mustard paste, garlic, soy sauce and seasoning into the chicken.
  2. Heat the oil in a pan cook the chicken fillets for 3 minutes on both sides.
  3. Add the cream and tomato paste and cover.

For the Rice

  1. In a deep pan heat the oil and sautee the garlic for 1 minute.
  2. Add the rice and sprinkle over the soy sauce. Cover till ready to serve.

For the Potatoes

  1. Heat the butter and oil in a pan and sautee the garlic cloes whole.
  2. Add the potatoes and soy sauce and sautee till they're golden brown. Add the seasoning.
  3. Serve the chicken and potatoes on top of a mound of rice.

For the Chicken
