Full question
Can chocolate be added to the Basque Cheesecake to make this chocolate based? If so, how much/what can be added? Thanks!
Our answer
Nigella's Basque Burnt Cheesecake With Liquorice Sauce (from COOK, EAT, REPEAT is different to her other baked cheesecake recipes as it doesn't have a crust and is baked in a hot oven until the cheesecake is risen and the top is brown and burnished. The cheesecake is also best served at room temperature, where is has an almost souffle-like texture (it becomes denser and firmer when refrigerated).
We have seen chocolate versions of Basque cheesecake and usually they have both melted dark (bittersweet) chocolate and (unsweetened) cocoa powder added. However, we have not tried adding chocolate to Nigella's recipe and so regret that we are unable to advise on the adjustments that are needed. Adding chocolate not only changes the flavour but it also changes the fat and sugar ratios and cocoa solids in the chocolate will also affect how the cheesecake sets, so you may need to change the sugar and egg quantities. However, Nigella does have a very popular Chocolate Cheesecake that is baked in a water bath and has a rich chocolate flavour that is amplified by the chocolate sauce.
