Can I Add Gelatine To The Nutella Cheesecake?

Asked by Bloke-Baker. Answered on 28th July 2026

Full question

I'm thinking of making the Nutella Cheesecake for a coffee morning - can I incorporate gelatine to firm it up so it won't go gloopy out of the fridge?

Our answer

Nigella's Nutella Cheesecake (from NIGELLISSIMA) is a very easy no-bake cheesecake. The filling is made from cream cheese, Nutella chocolate hazelnut spread and icing (confectioner's) sugar. These 3 ingredients are beaten together, poured over the cheesecake base and then chilled. As the mixture chills it becomes firmer.

Unfortunately we don't think that it is particularly easy to add gelatine to the cheesecake as you need to add softened gelatine (whether in leaf/sheet or powder form) to a warm liquid to dissolve it and this cheesecake does not have any ingredients that are suitable for heating. Also, gelatine softens when warm, so there in no guarantee that the cheesecake will that much firmer when it has been out of the fridge for any length of time, without adding so much gelatine that it becomes "chewy". We would suggest Nigella's Chocolate Cheesecake, which is baked and has a firmer consistency. Also, please bear in mind that cheesecakes should not sit out of the fridge for more than 2 hours, particularly in hot weather.
