Can I bake the Tres Leches cake a day or two before adding the soaking liquid, or is it best done the same day?

Our answer

Nigella's version of Tres Leches Cake includes lemon zest in the cake and the extra creamy addition of mascarpone in the topping. The cake needs a while to absorb the liquid and this should not be added until the sponge is completely cold.

The cake itself contains very little fat, since it will absorb the milk and cream from the soaking liquid. But it does mean that the cake on its own will stale fairly quickly and we are not sure that it should be left for particularly long without the soak. However, you could bake the cake the night before and leave it to cool in its tin overnight. Add the soaking liquid the following morning and then wrap and refrigerate the cake for 48 hours.
