Can I Freeze The Sweet And Salty Crunch Nut Bars?

Hello! I am wondering if it would work if I froze Nigella’s Sweet & Salty Crunch Nut Bars, as I am afraid that if I don’t then I will eat the entire lot, so delicious are they!

Nigella's Sweet And Salty Crunch Nut Bars (from KITCHEN) are a form of rocky road bars, but they have salted peanuts and crushed up Crunchie bars (honeycomb candy) mixed in with the chocolate, to give an addictive balance of sweet and salt. Most of these types of bars will freeze, particularly those made with shortbread cookies or Rich Tea biscuits (Marie cookies).

The particular problem with the Sweet And Salty bars is the honeycomb, as it can turn soft very easily. Sugar has a tendancy to attract moisture and as honeyomb is basically all sugar, it will absorb humidity from the air around it. If ice crystals build up around the bars then the humidity caused on defrosting will turn the honeycomb from crunchy to chewy. We would suggest tightly wrapping the bars individually with food wrap and then packing them into an airtight container before freezing for up to 1 month. Thaw the bars by unwrapping them, putting on a plate and leaving at cool room temperature for 1-2 hours. You may find that the honeycomb has turned a little softer and it is probably best to eat thawed bars within 24 hours. You may also prefer to try Nigella's Rocky Road Crunch Bars or Christmas Rocky Road, as both of these versions would probably freeze better than the honeycomb version.
