Can I Make A Larger Quantity Of The Lamb Shanks And Wide Noodles?

Asked by Flairyfairy. Answered on 19th October 2022

Full question

I'd like to scale up the Wide Noodles With Lamb Shank In An Aromatic Broth to feed 6 hungry people. Lambshanks and liquid no problem, but should I multiply the spices, salt etc by 3 as well?

Our answer

Nigella's Wide Noodles With Lamb Shank In An Aromatic Broth (from COOK, EAT, REPEAT) cooks lamb shanks in a combination of water and spices, as this forms the base of the aromatic broth that is used later.

It is relatively straightforward to scale up the dish (providing that you have a big enough pot to hold the lamb shanks) and if you are using 3 lamb shanks and 3 litres (12 cups) of water, then you would need to triple the amount of spices as otherwise the broth could end up tasting a little insipid, rather than aromatic. However, you may find that you need less water to cover the lamb shanks. So we would suggest that you measure the amount of water you are adding to the pot to cover the lamb shanks and if it is less than 3 litres then could can scale down the amount of spices used to match the volume of water used. If you find that you are using slightly more than 3 litres of water then just keep the spices at 3 times the amount listed in the ingredients. For the salt, you could use less during cooking and then when you reheat the broth the following day, taste and adjust the salt according to your own taste.
