Full question
Can I make one large version of the Little Lemon Puddings with some adjustment to cooking times?
Our answer
Nigella's Little Lemon Puddings are individual sponge puddings that are baked in ramekins. When the puddings are turned out, they have a coating of warm lemon curd on top. In theory it is possible to bake the pudding as one large version and you would need a dish of a capacity of around 1 litre (or 4 cups), which would approximate to a 20cm (8-inch) round dish that is 4-5cm (1 1/2-2 inches) deep. The baking time for this size of dish should be around 25-30 minutes at 180c/160c fan/350F.
However, as we have not tried the pudding in this form, we are unable to guarantee the results. In addition, you may find that with a slightly longer baking time, the sponge will start to absorb some of the lemon curd. So we would suggest maybe trying Nigella's Lemon And Elderflower Pudding Cake and serving the warm sponge with dollops of lemon curd. You could omit the syrup from this cake if you like, though we suspect that a combination of the syrup and curd would be delicious. You can warm store-bought lemon curd very gently in 10-second bursts in a microwave, or in a heatproof bowl set over a saucepan of hot water (making sure that the bowl doesn't touch the water) but warm the curd just until it is slightly runny, as heating it too much could cause the curd to scramble.
