I have enough almonds to make one Clementine Cake, but I wanted to ask if I can do this recipe with gluten-free flour to make muffins out of it as well. Would this work?

Nigella's Clementine Cake (from HOW TO EAT) is a gluten-free cake made with whole clementines that are cooked until soft and then blended with eggs, sugar and ground almonds (almond meal or almond flour).
Unfortunately we do not think that the cake will work if gluten-free flour is used instead of almonds. This is because the almonds contain oils that help to keep the cake moist. The oil from the almonds, plus a tiny amount of fat from the egg yolks, are the only fats in the cake, there is no other added fat or oil. If you use gluten-free flour then the cake will likely be unpleasantly dry and will not keep well. You might like to consider instead Nigella's Scented Cirtus Cake, which has a combination of both gluten-free flour and almonds. However, we would mention that we have not tried baking this cake as muffins.
