Will definitely give the Lime And Coriander Chicken a go, though I wonder whether, given the relative blandness of chicken breast, could I use chicken thighs for a tastier dish?

Nigella's Lime And Corander Chicken (from AT MY TABLE) is a recipe that enlivens chicken breast by infusing it with zesty citrus via the lime and garlic marinade and follows after cooking with a bright coriander dressing. The end result is moist and flavourful chicken that is far from bland.
Chicken thighs are certainly our first choice for many dishes and they could also be used here instead of chicken breast. You will need 300g (about 10 ounces) of boneless thighs, preferably with the skin still on (and please see the recipe introduction). The recipe is otherwise the same; remove any skin, flatten out the thighs a little, then marinate and cook them and spoon over the dressing.
