Full question
Can I prepare the Tortilla Lasagne with minced beef? We love the recipe, but my husband and two sons are no vegetarians. Thank you.
Our answer
Nigella's Tortilla Lasagne (from KITCHEN is a cross between a lasagne and a quesadilla, with alternating layers of tortillas and a mixture of beans, sweetcorn and tomato sauce. It is fairly quick and easy to make and is vegetarian.
If you wanted to make a meat version then we suspect that it would be easiest to make a batch of Nigella's Cheesy Chilli, omitting the cheese. Cook the chilli with the pan only partially covered, as you don't want the chilli to be too liquid. Add a large can of drained sweecorn kernels at the end of the cooking time (around 250g drained weight from a 320g can or about 1½ cups drained canned corn). Use this mixture instead of the beans, sweetcorn and tomato sauce filling to build the tortilla lasagne and sprinkle the cheese over the top of each layer of chilli rather than stirring it into the meat sauce itself. If you are going to use mozzarella for the dish then we would suggest using the low moisture type that is sold already grated or shredded, as fresh mozzarella contains too much moisture and will make the dish too soggy. Bake the lasagne as described in the recipe, making sure that it is piping hot all of the way through before removing from the oven, and adding extra cooking time if necessary. However, please note that as we have not tried the lasagne with a meat filling ourselves, we are unable to guarantee the results.
