Nigella's Date And Marmalade Christmas Cake (from SIMPLY NIGELLA) is a gluten- and dairy-free rich fruit cake that is perfect for Christmas but equally delicious at any time of the year. We would mention that the cake itself is not actually that "cakey" since it packed full of nuts and dried fruits. But may people adore the damp almost Christmas pudding texture and flavour of the cake.

The fruits are simmered in a mixture of black tea and marmalade. This plumps up the dried fruits so that they are tender and moist.
