Nigella's Chicken Barley (from AT MY TABLE) is an easy one pot meal that yields a comforting bowl of chicken, vegetables and pearl barley that falls somewhere between a soup and a stew. Chicken stock (broth) is used to cook and swell the barley and the stock is spiked with some English mustard.

English mustard is quite spicy and adds a piquancy that slightly cuts the starchy barley. If you don't have English mustard then you could use Dijon mustard, though this is milder and will not have quite the same kick as English mustard. Just before serving the Chicken Barley you could taste it and stir through a little extra Dijon mustard if you feel the dish needs it, or serve extra alongside for people to add as they eat.
