Nigella's Make-Ahead Mash (from AT MY TABLE) is a fabulous side dish to make when you are entertaining and want to make mashed potatoes in advance. The potatoes are mashed with a combination of sour cream, Parmesan and butter and topped with cheesy breadcrumbs before baking. The potatoes can be mashed up to 3 days ahead, stored in the fridge and then topped with breadcrumbs just before baking.

Nigella suggests using sour cream as it adds a nice tang to the potatoes. But you could use double (or heavy cream) as an alternative and in the same quantity (250ml/1 cup). It will give the potatoes a slightly creamier taste but they will still be as equally delicious.
