Our answer

Nigella's Pappardelle With Lamb Ragu has a quick-cooking pasta sauce that is made with lamb mince (ground lamb), tomatoes, herbs and spices. The sauce is used to coat wide pappardelle noodles.

You could use turkey mince (ground turkey) instead of lamb mince, if you prefer. We would suggest using turkey thigh mince as it has a slightly higher fat content than turkey breast mince. Turkey breast mince can be a little dry when cooked and in our opinion can slightly lack flavour. Otherwise, you don't need to make any big changes to the recipe but you might prefer to switch the redcurrant jelly for a couple of pinches of sugar. You need a little added sweetness to mellow the acidity of the canned tomatoes and you can certainly add redccurrant jelly if you have some in the fridge, though as this is usually associated with lamb you could just use a little sugar instead if you are cooking with turkey mince.
