Full question
Having a dinner party for 6. - really fussy diners, no red meat, fish, olives, capers or cheese! Can you help? Something simple which I can prepare beforehand
Our answer
When planning a dinner it is useful to be as fuss-free as possible and usually we find that a chicken traybake is a good option as it can be assembled on the baking sheet(s) in advance and left standing at room temperature for up to an hour (or covered and in the fridge if any longer) before putting in the oven to cook. Traybakes also need very little attention once in the oven. We would suggest using the Recipe Search function on NIgella.com. You can type in the main ingredient (such as chicken) and it will bring up all of the related recipes on the website. You can also filter the recipes by mood and also by certain characteristics such as gluten free or dairy free.
We would suggest a selection of dips instead of a formal first course as these can always be served with pre-dinner cocktails and for dessert a pavolva is always popular and the meringe can be made a day ahead. Agsin, you can find a selection of recipes on the website via the Recipe Search function using the keywords hummus, dip, cocktail and pavlova for each search.
