Just a bit confused...what type of red chiles does Nigella use in the Sweet Potato Curry? Are they dried chiles?

The type of chile we would suggest for this curry is a medium chile, such as a fresno pepper or a red jalapeno or red serrano pepper. You could also use the Dutch red finger chile peppers. Smaller chiles such as Thai bird's eye are much hotter and should only be used if you want a very spicy sauce.
