Full question

We don't have clementines or satsumas in Australia. Can I substitute an orange for the Christmas Spiced Chocolate Cake and, if so, how much?

Nigella's Christmas-Spiced Chocolate Cake (from NIGELLA CHRISTMAS is a gluten-free sunken chocolate cake that has been gently spiced with cinnamon and cloves and has extra flavour from coffee and clementines.

We understand clementines can be difficult to find out of season in Australia and a small, thin-skinned mandarin orange would be the closest alternative. If these are not available either then we would suggest using an orange as an alternative. As oranges are larger than clementines we would use the zest of half an orange in the cake batter and 3 tablespoons of fresh orange juice for the topping.
