Full question

I am curious to know why the recipe for Coxinha specifies 1 litre of chicken stock, then says remove some until you have 375ml left. What happens to the remaining 625ml of stock?. If it isn’t used, then why list it in the first place?

Our answer

Nigella's Coxhina are Brazilian chicken croquettes made with cooked chicken breast. The recipe starts by poaching 3 chicken breasts in chicken stock and you need about 1 litre of stock to be able to cover the breasts in liquid and ensure even cooking. Some of the cooking liquid is then used to make the croquettes.

There is some poaching liquid left over and if you prefer not to discard it then it can be cooled and refrigerated (within 2 hours of using) and stored in the fridge for up to 2 days. You could use it for soup or to make a risotto. The stock can also be frozen for up to 3 months in an airtight container and should be thawed overnight in the fridge before using.
