Dark And Sumptuous Wedding Cake

Full question

I am making a vegan wedding cake for a friend and was considering Nigella's vegan Dark and Sumptuous Chocolate Cake as it's so good. It needs to serve 22-24 people though, so I was wondering if it was possible to stack smaller versions on top or do you think it's too gooey? Would using dowels give it enough support?

Nigella's Dark And Sumptuous Chocolate Cake (from SIMPLY NIGELLA) is a popular cake for both vegans and non-vegans as it is easy to make, moist and delicious. However the cake has a very tender texture and we would be slightly concerned that the cake could crack and break if you try to stack too many layers. You could try adding dowels and then putting the top cake on a thin cakeboard to sit on top of the dowels in the base cake, but again as the cake is tender it may crack a little when the dowels are inserted. However this option may work if you are able to stack the cakes at the reception venue and not have to move them again.

We would suggest considering a type of tiered cake stand instead. These come in various designs and can be rented. The Dark And Sumptuous cake will usually serve 10-12 people and for a wedding, or at the end of a large meal, we suspect that two cakes should be enough to serve 22-24.
